Abstract

The present investigating work developed during January to March/2018 in Cold Room Storage belong to Bayamo, Granma, Cuba with the objective to evaluate on evolution behavior of the nutritious quality of different chemical indicators (humidity contents, total soluble solids, starch, proteins, vitamin C and ashes) from two potato varieties Spunta and Romano a long of the refrigerating storage was carried out. The determinations of the different chemical indicators were developed to the start and 60 days of storage, taking at random from thirty tubers of the set of 150 for each variety and storage time. Multivariants techniques were applied to evaluate the tracking in storage of the two varieties and to establish the both differential behavior. The Spunta variety showed a significant variation in the majority of these chemicals indicators, with an increment in reducing sugar (0,24-0,33 %) and decreasing the humidity content (74,21-68,41 %), starch (21,68-16,33 %) and vitamin C (18,40-11,65 mg100 g-1MF). In the Roman variety, they produce sensible decreases in the humidity content (70,74-65,70 %). They did not produce significant variations in the proteins content, total soluble solids and ash for both varieties.
